Sockeye salmon is smaller than most other salmon, weighing in at about five pounds to a maximum of 15 pounds, with thinner, more compact flesh. Most wild-caught sockeye sold in the U. Whereas the commercial catch is fished out at sea to get the salmon before it reaches the river and is still at its fattest and tastiest.

Sockeye salmon has firm, compact flesh, which makes it stand up very well to grilling. Grill sockeye salmon fillets skin-side down without turning them. Cooking sockeye salmon on a cedar plank is a traditional method that helps prevent the fish from overcooking or sticking to the grates.

The sockeye salmon eats more plankton and crustaceans like shrimp than other salmon species, which contributes to its darker color and rich flavor. Sockeye salmon is the second fattiest salmon after Chinook and has the added benefit of having the firmest texture of all Pacific salmon.

Our sockeye salmon are caught using a stationary gillnet, meaning we set our nets with small buoys to float at the top of the water and then the anchor holds one end of the bottom of the net taut, so the net is against the open current.

The salmon then swim into the net and are caught by the gills, once caught the nets are pulled on board. As each salmon comes on board it is removed from the net by our deckhands placed on a rubber slide so they do not hit the floor of the boat and become bruised.

This slide then moves them to another deckhand who bleeds each individual salmon and then places it into a refrigerated circulating seawater storage tank below. All salmon are then processed within 12 hours of being caught by our trusted processor Leader Creek Fisheries.

Processing includes flash freezing and vacuum sealing. All orders ship on Mondays-Wednesday, and orders placed after 10am on Tuesday will ship out the following week. All frozen products are carefully packed on dry ice to keep items frozen however some packages may not arrive solidly frozen.

If you items do arrive partially thawed but frozen in the center, they may be safely refrozen with no noticeable loss of quality or nutritional value. All frozen packages will arrive within business days depending on your destination.
